15 Minute Mexican Salad with Avocado Cream Dressing

Eating healthy doesn’t have to be expensive, fancy or time consuming! Sometimes, we get overwhelmed with all the options and forget that throwing a bunch of veggies together IS enough!

Simple meals are where it’s at for me during the week when I have classes to teach, clients to meet and kids activities to drive around too. I keep my fridge stocked with veggies and my pantry full with canned beans for salads, wraps and bean burgers. 

And no need to make a separate meal for the kids, they will love this salad. Mine always go back for a second helping! 

You probably have some, if not all of these ingredients in your fridge right now:) If not, stock up because you might only have 20 minutes to make dinner one night and now you can whip up the perfect meal with no stress.

WHAT YOU NEED

  • 1 head of romaine lettuce
  • 1/4 head of purple cabbage
  • 1 orange pepper
  • 1 mango
  • 3 green onions
  • 1 can of black beans, drained and rinsed
  • 1 small can of corn
  • 1 large ripe avocado
  • 2 limes
  • splash of apple cider vinegar
  • cilantro

WHAT TO DO

  1. Chop up all the veggies and mango and put in a big bowl with black beans and corn.
  2. TO Make the dressing blend avocado, lime, cilantro and apple cider vinegar.
  3. Toss the salad with dressing and a little salt and pepper.
  4. Enjoy!

OPTIONAL

You could add crushed black corm chips to the salad, cheese and salsa, or make some rice and put it all in a wrap.
