ALMOND BUTTER–HOMEMADE SUCCESS!!

I enjoy almond butter, like a lot! I have tried making homemade almond butter in the past with a few failed attempts and a few so-so results. But in efforts to save a little bit of money, and conquer something that seems so simple, I gave it another go:)

SUCCESS!

The trick was to heat the almonds ahead of time to help them release their natural oils and to add in some coconut oil and cacao butter. Also, despite every recipe encouraging me to use a food processor, I used my Vitamix and cut the time it took to make in half with less frustration! After heating the almonds, allow them to cool so that they aren’t hot, then toss raw almonds with the coconut oil and cacao butter into your Vitamix. Then, turn your blender on medium and use the tamper to push down on the almonds. Pushing the almonds into the blades quickly turns it into almond butter. 

 

WHAT YOU NEED

  • 2 cups of raw almonds
  • 1/4 cup of coconut oil
  • 1/8 cup of cacao butter
  • 1 tsp of cinnamon
  • 1 tsp of sea salt
  • High-Speed blender or super powerful food processor

WHAT TO DO

  1. Heat oven to 250 degrees and pop in those almonds on a flat baking dish for 15-20 minutes to heat (longer at higher heat if you want to roast them for that roasted flavor)
  2. Allow the almonds to cool slightly before adding them to the Vitamix (warm to touch).
  3. Add the cacao butter, coconut oil, cinnamon, and sea salt to the almonds and blend using the tamper to keep it moving along nicely. It took about 8 minutes to get super creamy.
  4. Store in a glass jar and keep in the fridge (a few weeks) or on the counter for a few days. When kept in the fridge it does harden a little so I take it out a few minutes before I want to use it.
