Asian Cabbage Salad with Edamame and Orange

This salad has the perfect crunch to it that I find so satisfying! Oranges and sesame dressing were designed for each other. The flavours in this salad unite to make one tasty, delicious dinner!

WHAT YOU NEED

  • 2 oranges peeled and chopped up (I used grapefruit and blood oranges!)
  • 1/2 head of green cabbage cut into thin ribbons
  • 1/4 head of purple cabbage cut into thin ribbons
  • 3 medium carrots grated
  • 1/2 head of broccoli chopped up into small pieces (or use the pre-cut broccoli bag like I did)
  • 2 cups of shelled edamame
  • 1/2 cup of chopped cilantro

Creamy Sesame Dressing

  • 2 dates
  • 2 tbsp of sesame oil
  • 2 tbsp rice vinegar
  • 1-2 tbsp of Soy Sauce (Braggs preferably)
  • 1/4 cup unsweetened almond milk
  • 1 small clove of garlic minced
  • 2 tbsp of tahini
  • 1tsp finely minced fresh ginger.

WHAT TO DO

For the dressing just add all the ingredients in a blender and blend until completely smooth.

Salad is simple as well, just combine ingredients and toss with the dressing. Garnish with cilantro.

TIP* I buy frozen shelled edamame and just microwave mine when I need them. It’s cheap, fast and easy!

And of course you can swap the cabbage for lettuce and add chicken to this salad. That dressing tho! It obviously makes more than you need for one night but that’s ok, this is one dressing that won’t go bad in your fridge:)
