Banana Almond Pancakes

Saturday morning are meant to be enjoyed! You’ve worked hard all week and deserve a little sleep in! I love lounging around in my pj’s, spending time cuddling my kiddos, drinking good coffee and eating a big delicious breakfast:)

These are my go-to easy pancakes. I add lots of plant protein and use spelt flour to make sure they are healthy (well that depends on how much maple syrup I cover them in).

 

What You Need

WET INGREDIENTS

1 banana

½ cup of almonds

1 cup of almond milk

1 egg (optional)

¼ chia seeds

¼ cup ground flax

tsp vanilla

Throw all these ingredients in the vitamix and blend until smooth.

DRY INGREDIENTS

Add 1 cup spelt or buckwheat flout

½ cup oats

1/4 cup of hemp hearts

1tbsp baking powder

1 tsp cinnamon

a pinch of sea salt

 

 

Once all dry ingredients are whisked together, add wet ingredients and stir until there are no more clumps.

These are hearty pancakes so the mixture shouldn’t be to runny. Only add more milk if you feel you absolutely need to.

Heat up frying pan or pancake griddle, grease with coconut oil so they don’t stick to the pan and cook them like you would any pancake!

I love topping my pancakes with fruit and of course, lots of maple syrup:

This recipe makes about 12 small pancakes so I usually double it since everyone in my family like to eat 4-5 pancakes each!

A quick note about hemp hearts, hemp hearts contain all the essential amino and fatty acids necessary to maintain a healthy body. They are truly nature’s most perfect food and they are completely plant based! I add them to every breakfast (oatmeal, smoothies, pancakes…) to fill up on amazing energy and plant protein.
