Cauliflower Rice Veggie Bowl with Avocado and Lemon Tahini

Looking for a fresh, easy lunch idea that is so packed with nutrients and packed with protein and healthy fats? 

I started really getting onboard the cauliflower rice train during my Whole 30 challenge. Sometimes (ok let’s be honest, often) I buy the prepared cauliflower rice in the freezer section because I’m a busy woman and like EASY things:)

But, to tell you the truth, making your own cauliflower rice only takes 5 minutes and it’s easy to clean the food processor afterwards. This recipe makes 1 large lunch bowl or 2 smaller bowls. And the best part is you can mix up the protein to suit your dietary needs. I’ve been enjoying this recipe with ground turkey, leftover chicken breast, or roasted chickpeas. My hubby like to have his with poached eggs or leftover salmon. Let you share with you the easiest cauliflower rice veggie bowl recipe with easy instructions and I’ll allow you to add whatever protein you like:)

WHAT YOU NEED

NOTE- You will need a food processor to make the cauliflower rice. I’m sure a blender could work as well but haven’t tried and if all you have is a box grater… that works as well:)

  • 1/2 head of raw cauliflower
  • 1 small white onion, diced
  • 1/2 red or orange pepper, diced
  • 1 clove of garlic
  • 3-4 cups of chopped leafy greens (chard, beet greens, kale, arugula etc..)
  • 1 avocado
  • a little coconut oil, himalayan pink salt and pepper.
  • Classic lemon tahini 

WHAT TO DO

  • To make the cauliflower rice you roughly chop up the half head of cauliflower and add to your food processor. Blitz the cauliflower into rice size bites. This only takes a few little bursts of power with the food processor. Careful not to overdo and make mush.
  • Next heat up some coconut oil in your pan and add diced onion, pepper and garlic.
  • Sauté for a few minutes until the onion and garlic are fragrant and add salt, pepper and garlic salt. Keep pan on medium to low heat.
  • Now add the cauliflower rice to the pan and onion mixture. Stir for 3 minutes.
  • Lastly add the leafy green to the pan and stir until the greens soften and whittles down, perhaps 1 more minute.
  • Transfer your cauliflower rice into a bowl, add avocado, your protein of choice and dress with lemon tahini.

And that’s it lovelies. Once you see how easy it is to whip up your own cauliflower rice, you’ll be making it for lunch daily. This whole meal really only takes 15-20 minutes and is a great way to switch up your usual avo toast lunch:)
