Chocolate Chia Coconut Cookies

File 2017-03-30, 6 26 04 PMI posted these chocolate chia coconut cookies on Instagram the other day and it seems like everyone could use another delicious chocolate cookie recipe in their life! 

I love baking and experimenting with new flours, flavours and superfood ingredients. The cookies of the past (butter, white flour and sugar) have all been revamped with the use of chia, spelt four and bananas. These cookies have a soft, chewy centre and are perfect as a decadent snack or after dinner dessert. They are also vegan, gluten free:)

IMG_7927Ever worked with coconut flour? It’s really a dry flour and absorbs a lot of moisture which is why there is 1/2 cup of almond milk in the recipe. IMG_7940WHAT YOU NEED

  • 1/2 cup of melted coconut oil
  • 1 banana
  • 1/2 cup of almond milk
  • 1tsp of vanilla
  • 1/4 coconut sugar
  • 2 tbsp of chia seeds
  • 1 cup of spelt flour
  • 1/8 cup of cacao powder
  • 1/3 cup of coconut flour
  • 1 tsp baking powder 
  • course of sea salt

WHAT TO DO

  1. Preheat oven to 375 degrees.
  2. Melt coconut oil and stir in the coconut sugar and chia seeds.
  3. Next blend the banana, vanilla and almond milk in the blender until smooth. Add banana mixture with the coconut oil/sugar mixture.
  4. In a separate bowl, combine the spelt floor, coconut flour, cacao, baking powder and sea salt. 
  5. Now combine the wet ingredients with the dry and mix until well combined. You will see how quickly the coconut flour absorbs the liquid and leaves you with a perfectly moist cookie dough.
  6. This cookie dough is easy to scoop up and form into small balls. I make 20-24 cookies as I like them bite size:)
  7. Bake for 12 minutes. 
  8. Once they are done, transfer them to a cooling rack. Store in a airtight container on the counter for a few days (if they last that long!).
