Chocolate Mint Avocado Pudding

Chocolate lovers rejoice! 

I am on a bit of a chocolate kick right now. Cacao is chocolate in it’s purest form. Cacao is raw and less processed than cocoa or chocolate bars. It is much pricier and harder to find in the grocery stores. Cacao has extremely high levels of antioxidants and is packed full with magnesium and other minerals, protein and healthy fats.

Cocoa is the heated or roasted form of cacao. Also full of good things like antioxidants and minerals. When buying cocoa, look for the brands that don’t add any sugar or fats. 

I actually didn’t know this until a few weeks ago so I though I would share that little tidbit of information as I always wondered what the difference was between the two and why cacao is so much more expensive. But don’t feel you need to splurge, cocoa will always do the trick and is still extremely good for you:)

Now on to that delicious pudding!

WHAT YOU NEED

  • 2 large ripe avocados
  • 1/4 cup of maple syrup
  • 1/4 cup raw cacao nibs (really for texture and the health benefits)
  • 2-3 tbsp of cacao or cocoa powder
  • 1 tsp of vanilla
  • 1/4 cup of chopped up organic mint leaves
  • 1/2 cup of vegan yogurt (I used cultured almond yogurt this time)
  • Mint leaves and cacao nibs for garnish

WHAT TO DO

Using a blender or food processor, blend all ingredients until the pudding is thick and creamy. Taste it and see if it is chocolatey enough for your liking:) I added a bit extra cacao powder and maple syrup to mine! Like I said, I am on a chocolate kick and was craving something decadent.

Place in individual cups or serving bowls and refrigerate for at least 30 minutes before serving. Waiting is the hardest part! Garnish with cacao nibs and fresh mint leaves and enjoy!
