Gingerbread Chocolate Chip Blondie Squares

It’s the end of November and clearly time for some holiday baking! These chewy, moist delicious squares were easy to make, composed of mostly healthy ingredients and tasted like Christmas!

When it comes to holiday baking, it’s all about the swaps:) Swapping regular white flour with something more nutritious like spelt or almond, swapping white or brown sugar with coconut sugar or maple syrup, swapping out margarine with butter or coconut oil. 

My style of baking is all about experimenting so I’ve made all the mistakes! Too goopy, falling apart, or pain awful baking happens, but sometimes, (most times) magic happens!

I wanted to share that I have now made this recipe 2 times, once with almond flour and once with spelt. Almond flour is so so expensive and I didn’t want people to avoid this recipe because of that cost. And to be perfectly honest, the squares made with the spelt turned out better! So bakers choice! I’m pretty sure any flour would work:)

WHAT YOU NEED

  • 1 cup of almond butter
  • 1/4 cup of black strap molasses
  • 1/4 cup of coconut oil
  • 2/3 cup of coconut sugar
  • 1 flax egg (or go ahead and use a regular egg)
  • 2 tbsp of almond or coconut milk
  • 1 cup of almond flour (or whole wheat, or spelt…bakers choice!)
  • 1/2 cup of dark chocolate chip
  • 1 tbsp of pumpkin spice (or a mixture of cinnamon, nutmeg and allspice)

WHAT TO DO

  1. Preheat oven to 375° and line a 9 inch square baking pan with parchment paper or grease it with some melted coconut oil. Set aside
  2. In a large bowl, combine almond butter, coconut oil, molasses, coconut sugar, flax egg, and almond milk. Stir until well mixed.
  3. Now add in the flour, spice and chocolate chips.
  4. Pour and scoop into your pan, spread evenly and into the oven it goes:)
  5. Bake for 35 minutes (checking around the 25 minute mark just in case..), remove and allow to cool before cutting into 16 squares. Store in fridge if you don’t eat them all right away.

Pro-tip: Serve with vegan coconut ice cream!

The whole family was over the moon with the 2 batches I made. This recipe is easy, a crowd pleaser and makes your house smell amazing.
