Souping is the new juicing. With soups you get all of the nutrients, protein, and fibre without any of the sugar. Soups are also warming and comforting at this time of year.

Nourishing Root Veggie Soup

A cleansing, veggie soup.

Ingredients
  1. 2 large beets peeled
  2. 2 onions chopped
  3. 4 celery chopped
  4. 4 carrots chopped
  5. 2 yam peeled and chopped
  6. 1/2 cup chopped basil
  7. 3 garlic cloves minced
  8. 8-10 cups of organic vegetable broth
  9. 3 cups of chopped kale
  10. salt and pepper
Instructions
  1. Get everything prepped ahead of time by chopping up all your veggies.
  2. Start by sautéing the onions in a large soup pot and adding the garlic salt and pepper once onion starts to soften.
  3. Add the celery, carrots, beets, basil and yams and cook in the soup pot for 10 minutes before adding the broth.
  4. Add the veggie broth and bring to a boil. Then turn the heat down and let simmer with lid off for 30 minutes or so.
  5. Add the kale and let simmer for another 10 minutes.
  6. Serve up and enjoy!
Notes
  1. A warm piece of homemade bread would make this soup the perfect comfort food for a dark, cold rainy day.
