Rainbow Salad with My Creamy Avocado Dressing

I love to get creative when it comes to making salads. There are just so many options and healthy ingredients to choose from!! This salad is packed with veggies, leafy greens and walnuts to make this a meal that will fill you up and leave you feeling the awesome effects of plant powered food.

WHAT YOU NEED

FOR THE SALAD FIXINGS

1 large bunch of Dino Kale

2 cups of Spinach

2 cups of chopped up purple cabbage

1 red pepper

2 grated carrots

1 cup coarsely chopped raw walnuts

Chop up all the kale first and place in a large salad bowl. Add a touch (1tsp) of extra virgin olive oil and massage your kale with your hands. This transforms the kale from bitter and tough to soft and edible. Chop the spinach, red pepper and purple cabbage then add the grated carrot and walnuts. Toss the salad and top with my creamy avocado dressing.

 

Creamy Avocado Dressing

1 avocado
2 tbsp chopped cilantro
1 chopped up green onion

1/2 cup olive oil
1 tbsp maple syrup
2 tbsp apple cider vinegar juice of half a lime
salt and pepper

I throw all ingredients into my Vitamix but any blender would do the trick.
