Sweet Potato Turkey Boats

Ok peeps, listen up… these Sweet Potato Turkey Boats are the most sastifying, tasty and EASY meal you need to be making. 

Ground turkey is delicious. IT’s been my favourite addition to my more paleo/plant-based diet. It’s easy to incorporate into bowls, salads, casseroles and tacos (obviously).

I have vegan Zucchini Boats already on my blog so this is an evolution of that recipe. You get your lean protein from the turkey, all your veggies in the scramble and of course, your healthy carb from the sweet potato. I drizzled mine in lemon tahini for some healthy fats but you could also add avocado to the mix.

WHAT YOU NEED

  • 3-4 sweet potatoes depending on size
  • ground turkey
  • 1 onion
  • 1 zucchini
  • 2- 3 cups of chard (or leafy green of your choice)
  • garlic
  • 1 red pepper
  • oregano
  • red chilli flakes
  • cilantro

WHAT TO DO

  1. Cut your sweet potatoes length wise into “boats” and place face down on a greased baking sheet and pop into a preheated oven (400 degrees). Set the timer to 30 minutes (baking time depends on size of sweet potatoes).
  2. Next chop up you veggies. 
  3. Heat a pan with some olive oil to medium heat and fry up onion and garlic with a little sea salt. 
  4. Add red pepper and zucchini to the onion mix after 3-4 minutes and cook until veggies are soft but not overcooked.
  5. Transfer your veggies into a bowl and heat up a little more oil. Add the ground turkey to pan and cook with a little oregano, salt and red chilli flakes until the turkey is cooked.
  6. Add the veggies back into the pan with the turkey and add the leafy greens and allow them to wilt down and everything to marry together,
  7. To prepare the boats. Scoop out a little bit of the inside of the sweet potato to make room for your filling (I save this and use it in baking or smoothies). You might have to wait till they col down a little but I usually find 5 minutes enough to get started with the scooping:)
  8. Lastly add the turkey/veggie mixture into the sweet potato boots and garnish with cilantro or fresh oregano. 
  9. Optional; drizzle with lemon tahini or top with avocado.

There you have it, an easy, delicious dinner that anyone can make and everyone will enjoy!
