Yam Black Bean Burgers

Black beans and yams are meant to go together. This vegan burger held together, was moist on the inside and crispy on the outside and seriously delicious. Did you know that black beans are one of the healthiest foods on the planet? They provide support for the digestive system, help control our blood-sugar and have a high amount of phytonutrients, protein and fibre. Plus they are inexpensive and kid friendly. All good things!

You need to be prepared for this recipe by having the yams already cooked in advance. Roast them in the oven that day or the night before with whatever else went in the oven:)

I had my burger with a Mexican slaw but you can load it up on a bun with whatever toppings you’d like.

Yam Black Bean Burgers

A perfect vegan burger with a Mexican flare.

Ingredients
  1. 1 can organic black beans
  2. 2-3 cups of cooked yam (approx 1 large yam or 2 smaller ones)
  3. 3/4 cup rolled oats
  4. 1 egg or I used a flax egg
  5. 1 red onion chopped up small.
  6. 2 cloves of garlic
  7. 1tbsp cumin
  8. 1/2 cup cilantro chopped
Instructions
  1. Start by baking the yams. Cut the yam into small squares and roast at 400 degrees for about a hour (or until soft and done).
  2. Next, gentle saute the onion and garlic until soft in a little olive oil.
  3. Place all ingredients into your food processor and mix until the ingredients gel together. Keep it a little chunky, you aren't trying to blend it completely, just mix and pulse up.
  4. Now it's time to get your hands dirty! Scoop up the mixture and form burger patty's. Place on a well greased cookie sheet.
  5. I made 8 smaller ones so the kids could take them for lunch.
  6. Bake in the oven for 40-45 mins, making sure to flip halfway through to ensure even cooking and crispy edges.
Notes
  1. I ditched the bun and had my burger topped with avocado and salsa. My burger was complemented by a yummy Mexican slaw I made from shredded purple and green cabbage, 1 can of corn, 1 red pepper, green onions, and tomatoes dressed with a lime, garlic, olive oil dressing.
