BEET, SPINACH and POMEGRANATE SALAD

I love beets! They contain betaine which is an amino acid that works to help protect the heart and liver. Beets also lowers our cholesterol, clean our blood, lowers our blood pressure, and have a ton of antioxidants and minerals to keep us healthy! They truly are amazing so add them to your repertoire to reap the benefits. This recipe calls for raw ingredients but if you’d rather use cooked  beets or roast your pumpkin seeds, that would be yummy too:)

WHAT YOU NEED

6 cups of baby spinach

1 large beet (or 2 small ones) raw, peeled and shredded or chopped small

Or if using cooked, use LOVE BEETS, organic cooked beets

1 large red apple (of any variety) chopped into small pieces.

1 yellow bell pepper chopped into strips

1/2 cup pomegranate seeds

1/4 pumpkin seeds

DRESSING

1/4 cup quality olive oil

1/8 cup apple cider vinegar

1 tbsp dijon mustard

2 tsp maple syrup

1 tsp horseradish (for a extra kick)

 

WHAT TO DO

Simply add all the salad ingredients into a bowl, whisk the salad dressing ingredients together then toss everything to combine. Season with salt and pepper and voila!

It’s as delicious as it is pretty:)
