Christmas Bliss Balls

We are in full swing Christmas Cookie Season, and I felt inspired to make something that was raw, vegan, gluten free and that was delicious and festive.

Just because I eat primarily gluten free and vegan doesn’t mean I don’t love a yummy treat.

So I created my own Christmas Bliss Balls.

What I love about bliss balls is how easy they are to make. Seriously, 15 mins for prep and clean up and voila, done.

WHAT YOU NEED

1 Cup Raw Almonds

10 soft pitted Medjool Dates

½ cup of almond meal

½ cup dried cranberries

1/8 cup of unsweetened shredded coconut

1/8 cup hemp hearts

3 tbsp of melted coconut oil

¼ teaspoon of peppermint oil

WHAT TO DO

  1. Start by placing the 1 cup of raw almonds in your food processor and pulsing them until they become small course pieces.
  2. Then add the dates, melted coconut oil, almond meal and hemp hearts to the food processor and blend until the mixture is evenly combined.
  3. Last add the cranberries, peppermint oil (use sparingly!) and shredded coconut and just blend for another 10 secs or so until everything is well mixed together. It should be chunky and may seem a bit moist but that is from the melted coconut oil which will harden in the freezer.
  4. Make the mixture into little balls by rolling the “dough” in your palms then place in a glass  container lined in parchment paper (approx 15 balls). Place in the freezer at least ten minutes before serving.

These should be stored in either your freezer or fridge which is why I recommend using a nice glass container with a lid that seals.

To say I was happy with the results is an understatement!
