Best Toast Toppings

Need a little creative boost when it comes to your lunch? I hear ya. This post is inspired by one of my favourite Instagram accounts @stuffontoast. Toast has never seemed so exciting and delicious! Really, why be limited to peanut butter and jam, or hummus and tomatoes? If you think about it, the possibilities are endless.p1010432

For my six masterpieces below, I used Squirrely Sprouted Grain bread for my toast but you could use gluten-free, rye, sourdough or whatever bread you like. I don’t eat bread everyday so that’s part of what makes these yummy combinations that much more enticing. Plus this is a great way to get the kids eating more adventurously:) My 6 year old loves the mango chutney and avocado combo.

Check out these yummy combinations that my family and I have been loving.

  • p1010451Avocado, mango chutney and crushed roasted chickpeas. This one is quite filling with the healthy fat from the avocado, the protein from the seedy bread and chickpeas, and the complex carbs from the sprouted grains. Plus the mango chutney makes it TO DIE FOR! Thank you Lauren Patron for this idea:)
  • Pear and almond butter with pomegranates and walnuts with a maple syrup drizzle. No need for dessert after this yummy combo. The pomegranates and walnuts make this sweet toast a superfood combo. Loaded with antioxidants from the pomegranates and brain power from the walnuts, I highly recommend this unlikely duo.

  • Berries on toast with homemade cashew cream cheese (recipe below). Making your own vegan cream cheese takes 5 minutes. Honestly, I don’t even soak the cashews beforehand and they still manage to transform into the creamiest “cream” cheese that is packed with healthy fats and fibre. Use whatever fruit you have on-top of the cashew cream cheese. This past summer we had lots of figs and that was so ridiculous. YUM YUM YUM

 

  • p1010454Classic tomato, basil and strawberry fig balsamic reduction. I put a little Veganaise under the tomato the added the fresh basil and drizzled it all in the strawberry fig balsamic reduction. A little salt and pepper and this classic might just knock your socks off!

 

 

  • Cucumber and arugula with hot spicy mustard. This nice light option packs a lot of nutrition all into one spicy piece of toast. I used a speciality mustard that I had picked up at a local farmers market but any mustard goes well with cucumber. The sharp flavour of the arugula goes so well with the combo. I sprinkled some roasted sesame seeds on top for some extra flavour and texture.p1010447

 

  • p1010448Peanut butter and banana with hemp hearts, chia, and coconut chips with a honey drizzle and topped off with cinnamon. Another classic done up extra special. The superfood topping makes this banana and pb a lasting snack, breakfast or lunch. And it feels like you are having a decadent dessert on toast:) I mean peanut butter and banana were meant for each other, that’s just science:)

Cashew Cream Cheese
A creamy dairy free alternative to cream cheese.

Ingredients
  1. 1 cup of cashews (preferably soaked for a few hours)
  2. 2 tbsp of lemon juice
  3. 2-3 pitted dates
  4. 1-2 tbsp of water (depending on how thick you like it)
  5. 1/2 tsp of sea salt
  6. Optional dash of cinnamon and vanilla:)
Instructions
  1. Soak your cashews for 2 hours (this step can be skipped if you're in a hurry)
  2. Rinse the cashews and put all ingredients into a high speed blender or food processor.
  3. Blend for 2-5 minutes until smooth and creamy!
  4. Refrigerate for an hour before spreading on toast:)
