Goody Granola Bars

Do you still buy granola bars because they are easy and convenient? I admit, I used to. It has just been in the past year of two that I have finally said no more to the store-bought granola bars that are unfortunately loaded with sugar and cheap oils and started getting creative with making my own.

Making your own is easy and 100 times better for you. The problem with making  your own is getting them to stick together without making rock hard/break your teeth bars. I want my granola bars to be chewy and filled with wholesome real ingredients. I have been loving goji berries lately so decided to use them instead of cranberries. They goji berries on the top turned black once baked but you can see the ones in the granola bars stayed red and soft and chewy. Goji berries are rich in nutrients, are an excellent sources of antioxidants, are great for your skin  because of their high beta-carotene levels, and low in fat and packed with fibre.

GRANOLA BAR HEAVEN.

I put together some of my favourite ingredients and voila, out came the Goody Granola Bars. They hold together, taste soooooo good, and are a healthy grab-and-go snack for busy days away from the house. I have been giving them to my girls for after school snacks and taking them to work with me for a high protein, high fibre, healthy snack.

Add any of your favourite nuts, seeds or dried fruit to suit your taste. I pretty much put pumpkin seeds in everything because of their high iron and magnesium content but you could use cranberries, raisins, almonds, walnuts, dried cherries, hemp hearts etc….. The trick to getting them to hold together is letting them cool completely before cutting them up and serving them. I wrapped my individually and keep them in the freezer.

Goody Granola Bars
A chewy, healthy version of the store-bought granola bar.
Ingredients
  1. 2 cups large old fashioned oats.
  2. 1/2 cup of organic coconut palm sugar
  3. 1/2 cup coconut oil
  4. 1/2 cup almond meal
  5. 1/2 cup goji berries
  6. 1/2 cup pumpkin seeds
  7. 1/2 cup sunflower seeds
  8. 1/2 cup cashews chopped
  9. 1/2 cup of applesauce
  10. 2 tbsp cinnamon
  11. 1/2 tsp sea salt
  12. 1 flax egg
Instructions
  1. Combine all the dry ingredients.
  2. Melt the coconut oil, applesauce and flax egg and whisk until smooth.
  3. Add the wet to the dry and stir well.
  4. Pour into a greased (with coconut oil) 9x13 pan and pack down the granola mixture with your hands.
  5. After spreading it out evenly and packing it down bake for 35-45 mins at 375 degrees.
  6. Let cool completely before attempting to cut into bars.
