Zucchini Noodle with Tomato Mushroom Sauce.

Zucchini Noodles are easy, healthy, and delicious. 

You will need a spiralizer to make the zucchini into noodles. I have a the World Cuisine Tri-Blade Spiralizer that I got on Amazon https://www.amazon.ca/World-Cuisine-Tri-Blade-Spiral-Vegetable/dp/B0007Y9WHQ and it works great. I can make beet, carrot, potato or zucchini spirals easily and clean up is no biggie.

I eat my “zoodles” raw but you could also warm up them in a pan if you wanted them a little softer. Just be careful to not overcook the zucchini, it will make your pasta watery.

WHAT YOU NEED

2 large organic zucchinis spiralized

2 tomatoes (I used local orange tomatoes) 

1 large sweet onion

1 large red pepper

2 cloves of garlic

large handful of spinach

2 cups of cremini mushrooms

1/2 jar of Organic tomato basil pasta sauce

 

WHAT TO DO

Chop up all the veggies into small pieces.

Start by heating up some olive oil in a pan and gently sautéing the onion and garlic. 

After 5-8 minutes, add the mushrooms, red pepper, tomatoes and spinach.

Cook all together for another 5 minutes.

Add the 1/2 can of sauce and cook and stir for another 5 minutes.

Season with salt and pepper:)

This recipe make 2 servings.
