Knowing how to make your own dressings in crucial in avoiding sugars, preservatives  and unhealthy fats. I consider myself a master salad dressing maker. I love getting creative when it comes to making salad dressings. Otherwise I would get bored of eating vegetables all the time. Plus by making a healthy dressing you are also ensuring that you are better absorbing your nutrients. By adding healthy fats, vinegars and citrus juices you are making some of those leafy greens more digestible and helping you absorb the nutrients in them. 

Some facts that will help you in making the perfect salad dressing.

  1. You need fat to absorb nutrients in certain veggies. Fat also helps make you feel full for longer and is great for your skin and  hair. Example of healthy fats are avocado, avocado oil, olive oil, flaxseed oil, sesame oil etc…
  2. Vinegars and lemon and lime juice help break down the food a little before we consume it. They also improve digestion on those raw veggies you are consuming:) Apple cider vinegar is especially good as it is a fermented food that delivers on probiotics as well.
  3. Adding a creamy base makes your salads so much more enjoyable. Try veganaise (or a healthy mayonnaise), dijon mustard, avocado, hemp hearts, chia, flax, tahini or miso to add a creamy texture.
  4. Natural sweeteners can be added but use sparingly. A little goes a long way. Honey, maple syrup or even blending a date or two into your salad dressing makes it extra delicious! 

Having a high speed blender is helpful but not necessary. I often just shake up all my ingredients in a mason jar.

This Lemon Tahini recipe is an new variation of the classic lemon, tahini, garlic dressing I make almost every week. It’s funny how having one new ingredient can blow your socks off!

New and Improved Lemon-Tahini Dressing
A variation of my classic lemon tahini sauce.

Ingredients
  1. 3 tbsp of tahini
  2. 1 tbsp of coconut nectar vinegar
  3. 1 lemon juiced (2-3tbsp)
  4. 1 garlic cloves pressed
  5. 1 tbsp of olive oil
  6. 1-2 tbsp of water depending on consistency.
Instructions
  1. Put all ingredients in a food processor or high speed blender.
  2. I like it thick enough to eat with a spoon but add water to reach your desired consistency.
  3. Season with salt and pepper if you wish.
Notes
  1. This dressing goes well on any chickpea salad, leafy greens, drizzled over roasted veggies or as a dip.
