Vegan Broccoli Soup

Broccoli has been around for awhile and we know that it’s good for us but do you know how incredible broccoli actually is! I mean, it is the superman of all veggies and should be on you grocery list every week! I buy a head of broccoli every time I am at the produce market. Broccoli is a cool season vegetable so is in season from October-April. Of course here in Canada we can buy broccoli all year round.

  • it’s cheap, easy to cook, delicious to eat raw and is extremely nutrient dense. 
Vegan Broccoli Soup
Serves 4
A creamy, delicious broccoli soup. probably the best broccoli soup I have ever tried!

Ingredients
  1. 1 onion finely chopped
  2. 2 medium carrots finely chopped
  3. 2 stalks of celery finely chopped
  4. 1 clove of garlic minced
  5. 5 cups of broccoli chopped
  6. 5 cups of organic vegetable broth
  7. 1 cup of cashews
  8. 2 tbsp nutritional yeast
  9. 2 tbsp of olive oil
Instructions
  1. Heat oil in a large soup pan and add onions, garlic, celery and carrots. Saute for 5 minutes.
  2. Add broccoli and cook for another 5 minutes.
  3. Add 4 cups of broth ( I used Vegetable Better than Bouillon) and cook until vegetables are tender.
  4. In the meantime, blend 1 cup of cashews with the remaining cup of broth in blender until smooth.
  5. Once vegetables are tender, add the cashew mixture along with the nutritional yeast and salt and pepper.
  6. Bring back to a simmer then remove from the heat.
  7. Use a immersion blender to roughly blend the soup to your desired liking. (I like a few broccoli chunks in my soup).
  8. Serve and enjoy!
