Raspberry Coconut Dessert Smoothie

It’s hot here in Vancouver! Not that I am complaining:) I love the heat and the yummy summer treats that you get to make when the sun’s out and chilling on the back patio is a must.

For the last couple of months I have been making my girls after-school smoothies as their snack. Today they requested I try to make some ice-cream in the Vitamix and I was up for the challenge:)

Do you keep frozen bananas in your freezer? YOU SHOULD

I have been peeling and cutting up bananas to freeze in ziplock bags so that I always have some on hand to whip up a delicious smoothie. It’s easy to do and saves those ripe bananas from getting thrown out (not like that would even happen at my house)!

WHAT YOU NEED

1 cup frozen raspberries

2-3 frozen bananas

1/2 lemon juiced

1 cup shredded unsweetened coconut flakes

1 can of full fat coconut milk

WHAT TO DO

Blend in a powerful blender until smooth.

Garnish with fresh raspberries, hemp hearts or more shredded coconut.

TIP: Pour this dessert smoothie into a popsicle maker and freeze for a yummy frozen treat.
