Walnut Stuffed Mushrooms

WALNUT STUFFED MUSHROOMS, VEGAN & GF

It’s time for me to share my favourite walnut stuffed mushroom holiday appetizer with you all (although you could make this any time of the year).

When you have dietary restrictions like me, it can be hard to find anything on the appetizer table that you can actually eat. I don’t do dairy, gluten or meat, so that excludes 95% of the traditional appetizers that are served around this time of year.

Which is exactly why I always offer to bring these stuffed mushrooms whenever I am invited to a party. Everyone loves them and they are gone quick so make sure you put some aside for yourself:)

WHAT YOU NEED

  • 20 Brown Button Mushrooms 
  • 1 cup walnuts
  • 1/2 sweet onion, diced small
  • 1 clove of garlic
  • 1/3 cup nutritional yeast
  • 1/2 cup chopped parsley
  • 1tsp Italian seasoning

WHAT TO DO

  1. Preheat your oven to 375 degrees.
  2. Rinse mushrooms, then carefully remove the stem creating a little pocket for you to put in your filling. If you need to scoop out a little extra mushroom to make the pocket bigger you can, but I usually find I don’t need to.
  3. To make the filling, heat up a pan with a little olive oil and add onions, garlic and parsley. Saute until the onions are soft and fragrant. Towards the end, add your salt, pepper and Italian seasoning.
  4. Now in your food processor, add the walnut, nutritional yeast and onion mixture. Do not over mix, you don’t want to make a dip, just a few pulses to combine and chop up the walnuts.
  5. Scoop a little bit (almost a tbsp) into each mushroom. I like to create a little mountain of filling in each mushroom.
  6. Bake in the oven for 20 minutes (may vary depending on the size of your mushrooms).
  7. Best served warm.

EXPERT TIP— If you are bringing these to a get-together, make the filling ahead of time and prep the mushrooms. Bring the filling and mushroom to the party and assemble and cook at your host’s house. That way they can be served warm and fresh!

You can easily modify this recipe and add feta or breadcrumbs to the mixture. I have also done it with fennel and made a pea puree to drizzle on top! FANCY:)
